Blueberry Vinaigrette Pancakes


  • 3 cups All-Purpose Flour
  • 3 tbsp White Sugar
  • 3 tsp Baking Powder
  • 1 1/2 tsp Baking Soda
  • 3/4 tsp Salt
  • 3 cups Buttermilk
  • 1/2 cup Milk
  • 3 Eggs
  • 1/3 cup Butter, melted
  • 1 punnet fresh Blueberries
  • 1/2 cup Vasse Virgin Blueberry Vinaigrette
  • 1 Banana for the topping



In a large bowl combine flour, sugar, baking powder, baking soda and salt. In a separate bowl beat together the buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook. Heat a lightly oiled griddle or frying pan over medium to high heat. Combine mixture as needed to create pancakes. Serve warm, stacked with blueberries and banana, then drizzle the blueberry vinaigrette over the top. Enjoy!
