Chilli Infused Pineapple and Cucumber Salsa
Ingredients:
- 1 medium-sized Pineapple
- 2 medium-sized Cucumbers
- 1 handful Cherry Tomatoes, halved
- 1 small Red Onion, finely chopped
- 1/2 cup fresh Mint, finely chopped
- 2 tsp fresh Ginger, finely chopped
- Vasse Virgin Chilli Pressed Extra Virgin Olive Oil
- Vasse Virgin Ginger Pressed Extra Virgin Olive Oil
- Salt and Pepper to taste
Method:
Peel and chop the pineapple into small chunks, then chop the cucumbers and remove the seeds (optional). Then chop the mint, tomatoes, onion and ginger. Mix everything together in a large bowl. Drizzle to taste the pressed chilli and ginger olive oils over the salsa. Add the freshly ground salt and pepper. This salsa is ideal for use with grilled fish, a BBQ steak, or a pork cutlet. Enjoy!
