Kalamata & red onion potato salad
6 medium sized fresh season potatoes (washed well)
1 red onion
good quality mayonnaise
2 tablespoons seeded mustard
kalamata olives to taste
Salt & pepper to taste
Boil the potatoes with their skin on until the a fork goes into the potato without too much resistance.
Cut the potatoes into bites sized chunks to cool.
Slice the onion finely.
Remove the pips from the olives and cut into quarters roughly.
Mix the potatoes, onion, kalamatas in a bowl then add in about 1/2 cup of mayonnaise and the seeded mustard and mix together.
