Macadamia Pesto and Haloumi Salad

Ingredients:

  • 1/2 Iceberg Lettuce or a mixed leaf salad
  • Vasse Virgin Macadamia Nut Pesto
  • Lime juice
  • 230gm Haloumi cheese
  • 1 Avocado
  • Vasse Virgin Mild and Delicate Extra Virgin Olive Oil

 

Method:

Slice up the lettuce (if using) into 1cm strips and slice up the avocado any way you prefer. Slice up the haloumi into thin strips and fry in the olive oil for approximately four minutes on either side or until golden brown. In a bowl, mix together the lettuce (or mixed leaf salad), the pesto, and avocado. Toss in the strips of haloumi and squeeze the lime juice over the top. Enjoy!
